You Crave It, We Make It!

When I was in school, I used to cook with mom like helping her out in chopping vegetables, making pooris and other dishes. My brother used to make chili potato & noodles, so when he used to cook, I felt I should also try cooking. I saw some recipes and tried making it, which came out very good, then I got attached to cooking & I thought let’s learn & make more dishes.

My journey this far!

The minute I completed my bachelor’s degree at Manipal University (Manipal, Karnataka) in Culinary Arts, I said to myself ‘go boy go’.

 While in college I would be all over the place – a lot of extracurricular stuff like recreational cooking, student demos, outdoor cooking, cooking on the beach (Under the sand) teaching Doctors & Engineers how to cook & simulations, etc…

Then came training at ITC Maurya, followed by ITC Grand Bharat. Crowne Plaza (Mayur Vihar) & A Reverie Restaurant, Goa.

That was an experience I can never forget, I served the Bollywood Celebrity Emraan Hashmi.

When the journey began

My first job!  

Gastronomica Restaurant, South Delhi, Junior Chef Research & Development –

An amazing one at where I considered myself lucky to be trained hands on with the current trends in the food industry.  

Soon I filled the position of Demi Chef De Partie –

Another amazing opportunity to learn preparation, presentation, the various styles, garnishing, timing, order handling, storage, costing, handling customer concerns & a gamut of other  

Then came this opportunity to help open a delivery kitchen with a Continental cuisine called BAE in South Delhi. I was heading there, I made all the menu & dishes, every dish recipe, how it is meant to be done, all procedures, packaging & everything.


The day I tried Chicken Quenelle. I can never forget the effort I had to put into the shape. Yes! I made it. 

…& how CraveDesi took off!

I remember how, I craved to work on continental, now for the past 1 and half years got this swing fusion cooking with dishes like, Butter chicken seekh kebab, Chicken Shawarma Poppers.

My own adventure – CRAVEDESI By Chef Paras Kapoor. 

We are a food delivery service across East Delhi & provide catering services across Delhi for Kitty Parties, Birthday Parties, Events & Personal Orders. It has been 11 months and I am enjoying every second. We open at 1PM close at 4AM.

On special techniques…

I think chopping a prime technique & I worked quite a bit to master it.
Handling orders is not just another task. It really requires training & dedication to understand the nuances of timely preparation, to quantity, consistency and much more. I chose to improve my skills in these two areas or chopping veggies and handling orders. Heading the kitchen is a great task & I think I had imbibed leadership qualities from taking care of even the smallest things like standing at the pass, checking what dish to go next at which table, following special cooking instructions by guests, to solving my chefs & junior staff concerns, etc.

A little more about me!

I love to train people with various cuisines. I conduct Professional training classes for Mexican, Italian, French, Indian cooking. There is this feel-good factor when I share my learnings and learning experiences. I sometimes look back and the days when I was learning and I still am.  

I also specialize in kitchen set ups for deliveries or cafés.  My planning skills come in handy and it’s fun to help people starting their adventure!

I love to eat South Indian Food and Chinese!
