Mother’s Day Special | A recipe passed down for generations

It was only during last year’s lockdown, I dug deeper into my Assamese heritage, specially when it comes to preparing food. While I was never a fussy eater back in day, I had never deeply appreciated the uniqueness of meals that my mother used to make. The situation of having to stay home in some way transformed my attitude about simple regional food.

I managed to recreate one recipe which I frequently crave, and it has been passed down for generations in my family – One Pot Chicken dry fry. I am not certain whether it was my grandmother or my great grandmother who started preparing it but it has been made in our family for ages and everybody seemed to revel in its deliciousness.

I remember sharing the joy of eating this dish with my 15 cousins since I was about 12 years old. Amongst all the other preparations, this recipe stayed with me because it was so simple, rustic and umami-rich.

Between pointless conversations, the high shrill laughter of my mother echoing through the room, I and my cousins would just wait patiently to eat this “One Pot Chicken Dry Fry” served with hot rice and mati dail (Assamese preparation of split urad dal). Believe me, it’s super easy and doesn’t require any fancy ingredients. I have prepared this recipe to impress a lover, feed my friends and the list goes one. Without further ado, here’s the recipe.

One Pot Chicken Dry Fry in 3 steps

  • Chicken with bones (cut in small pieces) - 500gms
  • Mustard Oil
  • Ginger - an inch
  • Garlic - 5-6 pods
  • Onion - 1 chopped
  • Green Chilli
  • Coriander powder - 1 tsp
  • Cumin powder - 1 tsp
  • Kashmiri Red Chilli Powder - 1 1/2 tsp
  • Some lime juice
  • Salt and turmeric according to taste.
  • Step 1 Wash and clean the chicken thoroughly. Now, transfer into a bowl and add the spices, chopped onions, lime juice, freshly ground ginger and garlic paste. Mix well and let it rest for 10 mins.
  • Step 2 Heat mustard oil in a kadhai on high temperature. Be generous with the oil. Add the chicken mixture and fry in high heat till it changes color. Add salt. Cover the chicken and cook in medium flame until it is fully cooked. Keep stirring often to avoid burning the chicken. Garnish with fresh coriander leaves.
  • Step 3 Serve hot with rice and dal.

My grandmother or mother never wrote this recipe down, I have shared a fair idea through countless telephone calls with my mother trying to exact the measurements. Hoping that you enjoy making this recipe as much I do.
